Taking bookings from international clients — time zones and deposit logistics

has anyone dealt with taking bookings from clients who are based abroad? i do destination weddings occasionally and the combination of time zones and deposit logistics can get messy quite quickly. curious how others handle it — specifically the payment side when clients are on a different currency or payment system.
